
How to make this vegan banana bread
What you will need:
2 very ripe bananas (the browner, the better!)
A cup of coconut oil
2 tablespoons of vanilla extract
All-purpose flour (you can make this gluten-free by using your flour of choice)
Baking soda
2 tablespoons of maca powder
A pinch of salt
Chocolate chips
Walnut chunks
Optional: if your bananas weren’t ripe enough or you like it extra sweet, use a sweetener of your choice, I usually opt for maple syrup or coconut sugar

How to make it:
And here comes the easy part:
Mash your bananas with a fork or blend it if you want a super smooth consistency, then add all of the other wet ingredients.
In a separate bowl mix the dry ingredients together, after that, gradually add the dry ingredients to the wet ones (i use a whisk and pull my dry ingredients through a strainer so there are no chunks). Mix everything and add the chocolate chips last.

Take your baking dish of choice and oil it so it doesn’t stick.
Put the banana bread batter in the oven on 180 degrees celsius for 30-40 minutes.

The only hard part in this process is to let your bread cool off before cutting into it because I promise you, you will be tempted to eat it immediately after you smell all of that deliciousness.

After you let it cool off for 20 minutes, you can enjoy your banana bread with peanut butter, hazelnut spread or just on its own. Either way, you will absolutely love it.

Its a root usually used in powder form, so if you decide to try it, look for Maca root powder. Maca is used for its adaptogenic properties. For example: increased energy levels, reduced stress and anxiety, increased libido, healthy brain function and for hormonal balancing(great for fertility, women in menopause and issues like PCOS and others).
